I've done olive oil but you may want to add some chicken stock to give it the right consistency. If the kids are picky eaters don't worry about them since they probably won't eat anything but the chicken nuggets anyways. Personally I would make what you usually do and maybe try some new things that everyone might enjoy.
I use vegetable broth. Years ago I saw a recipe for mashed potatoes using chicken broth and no milk or butter. I use veggie broth instead of chicken broth.

Just use the water they were boiled in. Not a lot, but some. Basically, don't drain them completely.
Or if you are making a pasta dish and are boiling the pasta, use the pasta water.

I have been in your exact same possition many a Thanksgiving. The mashed potaoes with olive oil, sea salt and pepper, are OK. For my taste, they are a little bland.
This dairy free (vegan) sweet potato recipe is so good that I do not make two batches of mashed potatoes any more. I like this one.
"vegan butter" is a type of margerine. Full discloure - I HATE margerine. However, "Earth Balance" brand does not have the creepy fake taste of most margerines or the bright yellow color.

I’ve done this and tbey are good. I recommend roasting garlic in olive oil as well and mash it with the potatoes. It adds sweetness and richness without the dairy.
But my fave non dairy mash is sweet potatoes with coconut butter and cayenne pepper.
