I coat my wings in a baking powder mixture and cook in the convection oven (similar to air fryer), and I am pretty famous for them. Crazy crispy.

I usually use a tad more powder. I add seasonings to powder (NOTHING with salt) like, garlic powder, ground coriander, cayenne, paprika, etc. whatever your taste.
Cook them. I found the wire rack crisps them on bottom... pain to clean, but worth it.
IMMEDIATELY liberally sprinkle (or toss in a bowl) with tajin chili/lime/salt.
(and I use the convection setting)

I just bought an air fryer at Walmart. Want to try out wings definitely.
Also big on egg plant. Trying to lose some pounds. my fryer suggests for veggies to toss the raw veggies with a little oil. Can you put a coating, egg wash and bread crumbs on the veggies? that's what I would have done to dump them in boiling oil. Like the crispy coating.
On the above directions, why avoid salt?

Salt draws moisture, moisture is the enemy of crispy. I've been meaning to try it with the salt, but I always end up doing it without because it turns out so well.
There are some recipes using baking powder that use salt too.

When we have wings later on this week I think I will give the baking powder a shot: sounds really worth a try. We did thighs last night: really cook to perfection.

I do something vaguely similar.
Remove the skin off oyster thighs.
Marinade in Frank's hot sauce,lime,chili flakes and garlic powder overnight.
BAKE in an oven.
