We went out to a local Mexican place, I got the special which was a combo of steak fajitas, rice, beans & a small burrito. I saved the burrito, so that will be Sunday nights dinner, along with some fresh beans & some fruits. It is nice to take a break from cooking for a few nights.

Homemade almost-vegan ceviche:

Chopped up hearts of palm, oyster mushrooms, tomatoes, avocado, a bit of mango, cauliflower.

Then marinated it in the leche de tigre, made of fresh squeezed lime juice, a bit of oyster juice, a touch of vinegar, and sea salt.

And then garnished with lots of cilantro.

It was so damn good. Posting it here in case I forget since I pretty much improvised...

Well because we filled our faces so much yesterday morning we were not hungry for dinner, we will have our ribs tonight. I am making a cold slaw/broccoli salad to go with the ribs and probably rice. I am taking some over to a sick friend as her husband has been left with most of the cooking and he isn't a cook. I know he uses pick up dinner places most of the time. I like to take them home cooked food every few weeks.
