Traditional corned beef, cabbage and boiled potatoes. Hm, according to the clock on my post it's past midnight on March 17/18. But it's only 10:30pm here, so I'm still Irish. LOL

It was a long and tiring weekend on the mountain. I am beat and then some! Last night we grilled up some kielbasa and served with corn on the cob and tater tots.

Tonight I am just pulling some leftover pulled pork out of my freezer. I will make sandwiches out of that and serve with apple slices and grapes. Easy peasy!

One of those days I don't know what to cook.A little light bulb keeps turning on and off.Sigh....

Thinking to make a creamy vegetable soup with onions,ginger,garlic,carrots,parsnip,celery,potato es and cilantro for garnish.Served with beer bread.To drink lassi or water with a lemon wedge.For dessert 1/2 a pink grapefruit.

For me, just a hunk of beef in the crockpot, slow cooked with a touch of Himalayan salt for a bit of flavor... I have so many food allergies/reactions, I'm doing a new elimination diet to see if I fare better than my last attempt, where I wasn't eatng the right foods, apparently. Turns out I'm allergic to eggs & black pepper... usually my daily b'kfast.

Fingers crossed... I'm already tired of beef, but, I can eat it... so, I'll just have to deal. Good news, so far, is after no eggs or seasonings of any kind for 1-wk, my asthma is 50% better.

For tonight:: chicken enchiladas, Mexican rice & salad. Tortilla chips & guacamole as a appetizer. Budweiser Light to drink. (Have guests from Seattle in town.)
