Baked chicken and rice (it's in the oven now). I think it's just me and the toddler tonight, so I won't bother with any side dishes.

For dessert I split a fresh green coconut with my dog who is always kind enough to de-husk it for me. We shared a little with the other dog, who did not help at all.

I found an eleven pound pork shoulder for a little over eight dollars at Big Y. I got up early today and started smoking it. I am thinking maybe 14 hours on the smoker today. Tomorrow I will wrap it in foil with some of the vinegar mop sauce I am using on it today. I will bake at 200°F for maybe three hours.
Wasn't it a thing of beauty at sunrise this morning?


I am too focused on making pulled pork to make much of anything for dinner. The family can make do with either casserole or fish taco leftovers.

*I can't rep yet but chessgeek your dinner sounds divine! Mikala I did not know that dogs will eat fresh coconuts. If I can find one I am going to try it with my dogs!

Great photo, magicshark. I'll bet you are driving your neighbors crazy.

I'm excited about supper tonight. We finally have the celestial convergence of ingredients at their bloom to make a good Southwestern big salad.

Salad greens
Avocados
Grape tomatoes
Vidalia onion
Black beans
Roasted sweet corn
Smoked chicken breast
Homemade salsa-style dressing and crispy tortilla strips

For dessert, sour cream blueberry muffin bundt cake

magicshark, I love that photo and I wish I could have some of that pork! I know it will be delicious.
