I premade sandwiches for a road trip yesterday, so it was fish sandwiches made up of cod, sauteed yellow squash, red pepper, mushroom, onion, lemon juice, mayo/yogurt sauce, and on hearty ciabetta bread.

We called them Frito Pies. A staple at football booster club concessions stands. Yummy.

Tonight we are having steak on the grill with grilled veggies and I am going to make the beet salad I had planned for last night but was just too tired to bother. We hope to be caught up on sleep by tomorrow morning
