Uptown Shake & Bake
Skinless Chicken Thighs soaked in an eggwash then coated with Italian Seasoned Bread Crumbs.
The skins get cooked down in the skillet and make the dogs very happy.


(I'll make these at least once a month. Wrapped in pairs and frozen for other nights.)

At hubby's request, making black bean and sweet potato burritos. Some kind of veggie on the side. Will decide when I get to the store.

Magic Shark's bleu cheese salad rocks! I want one right now.

We're eating free range today and leaving tomorrow to drive to a century old steakhouse in Mason City IA which has been on the bucket list for many years. Hope I remember to take a picture for you.

Mason City is the template for what was called "Gary, Indiana" in the musical "The Music Man." The movie debuted there when I was in high school and our band marched in the celebration parade. I wasn't one of the seventy-six trombones, however.

Another note - as a teenager my mom saw John Dillinger on the street there. She claimed he yelled at her group that if they didn't stop craning their necks he'd shoot their heads off. Apocryphal? Such is our link to Mason City history.

Instant Pot beef and noodles. I threw some carrots and celery in the pot too. Hopefully they're not mushy.

Almost done with a big ol' stock pot of chicken & dumplings. And while i know that it is not the healthiest...it is one of our cool weather favorites. Along with a pan of (also) unhealthy corn bread! A pan of regular for hubby. A pan of sweet for me & grand-daughter. Wash it down with peach tea.

Tonight is soup night. We will have a creamy roasted garlic cauliflower soup with plenty of Asiago cheese and topped with fried pork belly; Mexican street corn-black bean and avocado salad; bread sticks; and apple cobbler.
