What can I say, it's on sale this week at Hannaford for $6.89/lb. when it is usually at least $9.99/lb. I bought 6 pounds (will freeze most of it) and will likely go back tomorrow or Friday and buy several more pounds!!
Yesterday I had baked salmon with mustard ... BUT I stupidly did not look closely at the bottle of honey mustard that I was using ...
I've had this recipe before and it was delicious, so I was bummed that this was only OK -- especially because I made 2 pretty big portions, planning to have the 2nd tomorrow. When I took the dishes back into the kitchen after dinner, I checked the mustard bottle and saw that it had a "best by" date of OCTOBER 2017 ... UGH! I don't pay much attention to "best by" dates for a lot of things, but I definitely will for mustard from now on. (Oh, and the 2nd portion? I scraped all the mustard off and stir-fried it for a few minutes on the stovetop -- I'll be having it with my scrambled-egg-whites-and-veggie breakfasts for the next several days! )
Anyway, TODAY'S salmon was MUCH better ...
I just cooked it on the stovetop and had it with my usual big pile of veggies (today's: carrots, green beans, onions, tomatoes, zucchini, snow peas, and mushrooms). At the table, I added some barbecue sauce to the salmon and it was great (the veggies were too!). My kitties were hovering!
Mexican tonight. Quesadillas made with chorizo, onions, poblano peppers, garlic and muenster cheese. Corn salad/salsa with lightly charred corn, jalapenos, red bell, red onion, garlic, cilantro, lime juice, and queso fresco. And, of course, guacamole.
Chicken vegetable soup with dumplings made by my husband in his cast iron Dutch oven. YUM!
That sounds so good!
I'm not sure... spicy spam, eggs and rice? Probably.

Finished our leftover eggplant parmigiana, Alexa onion rings with Baby Rays Secret Sauce, the last of my Moscato wine, and also finished off my little breakfast Simply Peach drink.
