Tonight at the Case abode: A strip steak sandwich with buttery, sauteed onions, drizzled with Lea & Perrin's bold steak sauce on a buttery-toasted black-pepper/parmesan roll.
Going to air fry a couple of chicken thighs and add some potatoes, We are a bit low on salad fixings now that the Romaine has all been tossed, so guess we will have brussel sprouts. In fact think I will do the thighs in the pressure cooker instead and cook the sprouts and potatoes with them. One pot, simple dinner. I have some dishes to start that are for Thanksgiving. I am going to cook the sweet potatoes so they will be ready to put in the casserole dish tomorrow and am making a spinach artichoke dip.
Moroccan Chicken w/ potatoes a one pot great dish and the leftovers will be served over rice.

I went to Hannaford this morning trying to beat the Thanksgiving crowds -- it wasn't too bad (I think I was there around 9 a.m.). Replenished lots of veggies -- I'd run out of carrots and snow peas and was close to running out of mushrooms and onions too.
I'm trying to use up meat/poultry that's in my various freezers so today I had a pork chop (I cooked 2, ate 1, will have the 2nd tomorrow). Kept it simple by sprinkling thyme and rosemary-garlic seasoning on them, then cooked them in a cast-iron pan for about 3 minutes per side, then 6-7 minutes off the heat. I had to start the veggies MUCH earlier since the carrots take 40 minutes (don't have to watch them all that time, though!).
Oh, usually for the veggies I just use cooking spray, but the past couple of days I have used a tiny bit of oil instead (maybe half a tablespoon). I bought some of La Tourangelle's cooking oils from amazon and so far have tried avocado oil and stir fry oil; I also have sesame oil, peanut oil, and some others I'm not remembering (haven't tried those yet). I love experimenting in the kitchen ...
I didn't really taste the avocado oil (probably used too little), but the stir-fry oil was quite nice with the veggies. I am looking forward to trying the others!
Pork tenderloin sliced and pounded into cutlets, then breaded and fried in a mix of butter and oil, drippings used to make gravy, mashies and country green beans. Not fancy, but good.
