Oh how I miss you guys!!! Life is just very hectic right now. My new job, with out getting into details, revolves around the election and certain political figures. So of course we are crazy busy and I am almost never home. In top of that my husband was in a fairly serious car accident on Saturday. He has surgery on Tuesday to fix his leg, hopefully.

Anywho last night was chicken tacos. Tonight was Portuguese kale soup from our freezer. On a food side note a Vietnamese coworker's grandmother dropped off a fresh batch of her egg rolls at work today. Oh my! Best thing I have eaten in weeks!

I hope your hubby’s recovery goes well! I know you will miss his cooking.

Vietnamese egg rolls are the best thing ever. I hardly ever have them because there’s this place semi nearby that is a restaurant/factory and they are 4 for $1. I can’t control myself and will order and eat an entire large box. They are even good cold for some reason. Too dangerous!

Thanks!

I'm just curious but do you happen to know what meat is used. I couldn't place one of the vegetables, he told me what it was, and he named the other ingredients. I know he said chicken but I think he said tripe too. If it was tripe I now know I love it! I will ask when I see him this weekend but i want my curiosity appeased now!
