For a long time I ate lots of green beans & asparagus, but they both started giving me hives.

I guess lettuces should be in there as well for the salads that I eat. I don't really count onions as a vegetable -- they're simply a necessity for a tasty meal!

By themselves as a side dish:

Haricots verts / green beans
Brussels sprouts
Asparagus


Cooked in dishes:

Baby spinach (saags, etc)

Indian or Thai eggplant, snow peas (Thai curry recipes)


Onion/garlic/colored-ripe bell peppers as an ingredient

I would have tomatoes at the top of the list,but they are actually a fruit.

Most often eaten:

green beans
squash (any kind)
spinach
onions
broccoli

I could probably list a few others that are always in our fridge of the veggie basket as we are huge veggie eaters. Unfortunately I am a huge eater period.
