That is pretty much like we will have and most people I know. WE are not having the Shepard's pie. I don't see much need for it with the corned beef but it does sound good. We will also have a salad with the rest of the meal. It is rare we have a meal without salad. Now even though we always have corned beef and yes, we are 1/2 Irish, straight from Ireland I really doubt Corned beef has anything to do with Irish. As mentioned in this tread, it is a made up tradition.
I make the shepherds pie because I don't eat Corned beef and I love having leftovers of shepherds pie.
Braised corned beef is the oven with peppercorns, allspice, cloves, mustard seed, lemon and onion slices all on top. I’ll mix Dijon mustard and brown sugar and to put on top and put i5 under the broiler when it’s done.
Colcannon, cooked carrots, and Irish soda bread with currants and caraway seed.
A local food truck near where I live had an Irish brunch at a brewery. I had bangers and mash around 11:30.
I went hiking and did errands. Stopped at another brewery for a drink around 3:30. They had Scotch eggs on the menu for the holiday. I'm not an egg person, so I didn't eat that. Had a snack of fried kraut poppers with bacon breaded in panko and mustard.
Had homemade pizza for dinner.
