Sunday leftovers - roast chicken, mash, gravy, stuffing, broccoli, cranberry sauce.

Tomorrow I’ll cook something good again - this social distancing is going to make some of us fat!

Just came from a brisk walk in the countryside and the air smelled so fresh,yet felt quite cold and my nose picked up the fragrance of burning firewood.I saw a few deer at the edge of some trees near the field and a hawk I think circling up high probably looking for a breakfast meal.It was a peaceful time and a magical moment between me and nature!

Tonight green tea soup with a variety of vegetable and chicken pieces. For dessert 1/2 a pink grapefruit.

olive oil
chopped Vidalia onion
sliced carrots
sliced mushrooms
sliced celery
chopped garlic cloves
chopped curly parsley
cooked and diced chicken breast
salt/black pepper to taste
vegetable broth
green tea bag or green tea infuser
pasta of your choice to add at the end before serving the soup

Tonight we are having roasted herb turkey wings; mashed potatoes and gravy; cornbread stuffing; spinach and the rest of the lemon tarts for dessert.

Red beans with smoked ham, onion, celery and lots of spice, cheddar corn muffins, a batch of wings to nibble on.

Just finished dinner ... had a late physical therapy session but the good news was , no trouble parking -- the parking lots were pretty empty. I washed my hands twice while I was there and they were spraying down the equipment every time someone touched it, so I felt perfectly fine going. I'm still not in panic mode, but that's probably because I don't watch or read the news much AND I rarely check any of my stock-market accounts ...

Anyway, dinner was great -- pork tenderloin tonight. I decided to go REALLY easy on myself and use Shake & Bake (yep!) -- I've used their parmesan-crusted flavor on chicken before but never on pork tenderloin. I DIDN'T bake -- just coated the pork medallions (a bit less than 1/2" thick each, I think -- total 5.5 ounces) with the mix, then cooked the medallions on the stovetop as usual -- took all of 5 minutes. (I LIKE that kind of cooking! )



Had the pork with four of my usual veggies (carrots, onions, mushrooms, tomatoes -- I'm almost out of most of these, too!) plus a couple of ounces of sliced potatoes. Everything was delicious.

Dessert: split a Black Cherry Forest cupcake and a cup of hot tea with Mr. C.

Karen your dinner looks wonderful as always. There's always a silver lining of we look for it!

I love going out to eat and I have friends/relatives in the industry. I am not a fan of restaurant take out though. Here in Massachusetts restaurants are shut down except take out and delivery. I feel so awful for the small independent restaurants and their staff. So we ordered take out from our favourite sushi place tonight.
