Tonight a vegetarian chili with red,green,yellow,orange Bell peppers,lots of garlic,ginger,onions,green and red chilies,diced tomatoes and a bean medley.Garnished with cilantro and a dollop of homemade yogurt.To drink lemon water.For dessert baked apples with vanilla sauce.Later in the den a glass of Glühwein.

Baked apples...
raisins soaked in rum
Macintosh apples
mix butter,rum soaked raisins,sugar,fine chopped almonds and add in apples,pour rest of the rum over the apples and bake in the oven and serve it with warm vanilla sauce (or vanilla ice cream).
* Non alcoholic version use instead of rum orange juice or apple juice

Last night, I ended up reheating leftovers. Tonight, for reals, I will be cooking that pork chop that I've been threatening to eat all week.

Flank steak for has been needled and pounded and is marinating. After it is grilled I will steal a portion to make beef barley soup or similar. I've got a few carrots and celery to use up. I've got parsnips and turnips- would they be good in soup? Or save for something else?

Last night bf finished the spaghetti/meatballs from OG and I finished the white chicken chili. Tonight will be lemon peppered chicken breast with some veggies.

We're waiting to see what his work schedule is going to be now that they've allowed internet sales of cars in CO

Vegetables like parsnips, carrots, root celery can be cooked with a few potatoes and mashed together with a bit of butter, season to taste.
Today I did 2 potatoes and half small butternut squash mashed with butter. Serves 2.
2 small beef burgers, cut into 4 each, flatten a bit, pan fry in a little butter & olive oil.
Added 2/3 cup fine soup vegetables as a garnish to the mini burgers.
The very last tomato in slices and the last few mini onion pickles.

Cherry pie. Some frozen cherries,sprinkle of ginger and a little sugar, a squeeze of lime juice, pieces of frozen puff pastry like roof tiles on top, baked in oven.

Many thanks for the idea! I'm going to do something similar tonight, using fresh sage and rosemary that is getting old, and spinach. Maybe we'll have a small quesadilla on the side with mozzarella & bell peppers. Pear & apple pie later with the last of the ice cream.

Baked sockeye salmon fillets with green beans. Lemon meringue pie for dessert and Pinot Noir to drink.

Crock pot pork chops, rice, honey balsamic brussel sprouts and magic seven layer bars for dessert. Only an hour and a half to go. Dinner smells so good!
