One pot curried cauliflower with couscous, red lentils, spinach and yogurt with cilantro and lime juice drizzled over it and sprinkled with sliced almonds.

I had a head of green cauliflower from our weekly food co-op to use and looked for a recipe and had bought a bag of spinach yesterday. I’m still amazed how a bag of fresh spinach disappears into nothing when it’s folded into hot ingredients. With a naan, this was filling and satisfying.

I marinated then grilled a chicken breast in avocado oil, rice and balsamic vinegar, garlic, salt and pepper, and fresh basil.

It got sliced up to top a salad of romaine and baby spinach leaves, Strawberry? carrot, raw red onion, goat cheese, and grilled vegetables.

The grilled veg was an experiment for me — mushrooms, yellow squash, and red onion.

We spent most of our day outside doing gardening, yardwork and throwing the frisbee with Bella. The weather was great and we thought that something grilled for dinner sounded like a good plan. After a refrigerator recon, we decided to make a Grilled Vegetable Quinoa Salad. We also grilled up a couple of Beyond Hot Italian Sausages. The salad contained grilled eggplant, zucchini, tomatoes, onion, mushrooms and peppers. We had earlier cooked up a cup of quinoa, and made a dressing containing balsamic vinegar, a bit of avocado oil, white wine vinegar, garlic, fresh parsley, and mint. When the grilled items were cooked, the veggies got cut up, tossed into the quinoa, and mixed up with the dressing. It was a fine day and a tasty meal. We also shared a bottle of petite syrah vino. Later we raised our glasses in honor of all the brave men who gave their all, and some the ultimate sacrifice 76 years ago today, on the shores of Normandy. Our lives were forever changed.

I have a 10 pound pork shoulder roasting low and slow in the oven since 6:30 am Brined it overnight. It should be ready by 5 pm today. with it I'll make a salad.
