Haven’t been posting much as I can barely eat on 100 degree nights. Today was a cool Texas summer day at 91, so I baked a sheet pan of beautiful cherrywood smoked thick bacon.
I will be having a BLT and potato chips and a Chinese teacup of butternut squash soup.
I made my baby a hot dog and shredded carrot, which she ate, and green beans that are being played with but not eaten. Not sure what DH will make with his bacon.
Ohhh, you baked something. My son made BLTs with fried bacon. That was hot enough.
We are having pecan crusted pork chops from Fresh Market; already covered with the crust. Also brandy glazed yams, and cold slaw or green salad. that part I have to think about for awhile. I kinda thought if I did the pork chops and yams, it will make us think of winter meals and it might seem a bit cooler.

I never pan fry bacon since the first time I baked it. I can make 9 perfect straight slices at once with no spattering on the stove and little attending. Sometimes I have some leftover for recipes, but we ate it all yesterday.
It takes between 20-30 minutes starting in a cold oven set to 400 (depending on your oven and the thickness of your bacon and how you like it).
Too early for me to post tonight’s dinner as that’s a guarantee I’ll change my mind.
Probably beef/pork burgers with cheese cubes in the meat, a big salad, some horseradish coleslaw and frozen crinkle files. Yes! Mostly homemade fast food.
A scorcher but we have to finish some of the damage repairs from last Saturday's storms.
Brats on the grill, homemade potato salad, baked beans, and slaw.
