My Saturday Special:

Baked chicken, chickpea casserole, rice, fried mushrooms, tomato & cucumber in balsamic vinegar & oil, and cornbread w/ loads of butter.

Tonight I am thinking beef a roni, using ground bison, fresno pepper & green bells. And extra cheese.

I do know what our upcoming meals are, based upon what we need to use up.

Grilled pizza, tomato-centric as the garden is giving them all at once. Salsa will be coming soon, as I have jalapenos too. Onions, pepperoni and a lot of fresh herbs will probably round it out, and a whole wheat dough.

Also, spinach, lemon and ricotta on whole wheat noodles.

Hubby is fixing some ribs in the crock pot that we'll have with either egg noodles or mashed potatoes. Probably snap peas for a veggie.

I am making fried flounder and fried bay scallops, I roasted some cauliflower last night but it was bland so I saved it and I'm making a cheese sauce to go on top.
