I didn't cook over the weekend: we did takeout. Tonight we are having short ribs of beef with mashed potatoes and gravy; corn on the cob; chopped vegetable salad; honey pan rolls; and almond cheesecake for dessert.

Placed a bunch of fresh basil leaves at the bottom of a large salad bowl.

Added a container of fresh tiny mozzarella balls. A container of tiny tomatoes.

Placed some refrigerated bagged cheese tortellini in boiling water and
added the cooked tortellini to the bowl.

Added a package of sliced red wine and garlic salami. Topped with salt,
pepper and aged balsamic vinegarette. Delicious Caprese salad.

Poured club soda in a cup and added some fresh pineapple juice. Lemon burst
yogurt for dessert.

We picked up some grass fed all beef kielbasa (Costco) to grill, top with some homemade sauerkraut from a farmer's market, pickled peppers, onions and pickles and fresh tomatoes (will probably plop that all down on some arugula), corn on the cob and golden melon on the side. Sugar free choc pudding and coolwhip, and white wine coolers (lime juice, mint, sparkling water and wine) for me.

Tonight we had grilled steak tips, garlic bread and swiss chard sauteed up with bacon and leeks. That Swiss chard was incredible!

Actually cooking tonight. Chicken and broccoli in a creamy, cheesy rice casserole. Good for a couple of meals, too.
