Always like a little special weekend dinner, but also I am glued to the TV so have to work around football: We are having grilled salmon plus a bit of left over chicken from a few nights ago, fruit salad and brussel sprouts. I can get the sprouts ready to roast before the big games come on and make the fruit salad after breakfast. Salmon cooks fast on the grill or in the air fryer and chicken only takes couple minutes to heat in the micro.
We had chicken and blue corn pozole, and I made a big pot so that will also be on menu for next week. It had a dried chile sauce on the side that you added to your liking, and boy was it spicy! No pic because my phone died right after I snapped and it didn't save, so next week. I was a bit disappointed that the dried blue corn kernels lost most of their color as they cooked, though you could still get the definite blue corn taste.
Blackened salmon tacos. I'm not a fan of salmon so they will be highly spiced before cooking (we have patties from Costco that I bought for DH while I was out of state). Topping will probably be a pineapple salsa. Last night's cole slaw on the side.
Sugar free chocolate pudding, cool whip and hazelnut drizzle for dessert.

Making a small prime rib with roasted potatoes and peas. It’s The Last Supper for me, since I have a colonoscopy on Monday. Hubby will enjoy his leftovers tomorrow, while I enjoy Jello, broth..broth, jello, repeat. Yum.
Another salmon dinner here, my pal from the coast is visiting & she brought some local caught salmon. We will discuss the sides later, probably a red & green bell pepper mix & I am thinking basil couscous because that is so simple & quick to make.
