Tonight green lentil soup with carrots made in my slow cooker served with a slice of beer bread.For dessert 1/2 a pink grapefruit.

green lentils
sliced carrots
chopped onions
vegetable broth
thyme, basil, tarragon, savory, marjoram, oregano,bay leaf,black pepper and salt to taste
lastly whipping cream

* also good substituted with chicken broth and leftover shredded or cubed roasted chicken

Making my Asian meatball wraps, it’s been a while.

Mix ground beef with breadcrumbs, 1 egg, soy sauce, and finely chopped onion, garlic, ginger, a red Chile, and a drained can of water chestnuts. I like to bake my meatballs, then serve in warmed flour tortillas with plum sauce or hoisin, Chinese mustard, green onion, and shredded red cabbage. I will make some steamed spinach with a little butter as well.

Steak fajitas with all the fixings, except avocado. I don't have any left & am not heading to the store one item.

Leftover chicken piccata that DH made yesterday, with thin spaghetti and a yummy cauliflower dish that was in the Denver Post recently. Roasted cauliflower with pancetta, olives and crisp parmesan. We cut way back on the dressing and the entire dish was full of crispy goodness.

Tonight will be chili made from Chasen's famous chili recipe; jalapeno cornbread; cucumber and tomato salad; and banana bars with cream cheese frosting for dessert.

Meatballs (ground beef and spicy italian turkey sausage) in marinara (from the freezer) over whole wheat pasta. I'm sure we have some leftover veggies to add on the side.

We picked up some already cooked beef enchiladas so just heat and serve. I'm adding beans and rice for sides.
