The heat continues.....

Tonight Dijon mustard baked salmon and a small portion of wild rice.To drink Perrier water with some local Ontario white wine. For dessert chilled creamed cottage cheese cake with raspberries and raspberry sauce and a cup of ice coffee out in the garden.

salmon fillets
white wine
tbsp Dijon mustard
honey
sesame oil
sesame seeds

My creamed cottage cheese cake recipe from my childhood...
Put 1 or 2% cottage cheese in a strainer covered overnight in the fridge and next morning I blend it in the food processor until creamy

500 g cottage cheese container
3 eggs
3 tbsp semolina
150 gram sugar or less
knife tip of baking powder
1 lemon (rind and juice) the zestier the more flavorful
125 gram room temperature butter
Everything in a bowl, mix well with electric hand mixer and if you like add some golden raisins.
Bake in a springform for 70 to 90 minutes pending on your oven until golden brown. Cool cake, transfer and refrigerate. Freezes very well too!
*I like to serve this refreshing cheese cake with berry sauces or compote or with whipped cream and red currants
* I usually make a double portion/double the recipe then

Wishing you all for tomorrow a peaceful 4th of July with family!

Gonna grill a pork loin roast and serve with a variety of BBQ sauces. Fridge is bursting with fresh veggies from a variety of gardens, and I refuse to waste any of it, so we will have whatever looks like it will go bad first.

Edit: Decided on creamy horseradish beets and greens and cucumber and tomato salad

AND, strawberries and cool whip for dessert. When I was young and stupid, I used to swear that I would just forgo whipped cream if necessary, and NEVER eat cool whip. I stand corrected.

Dinner will be a Hamilton viewing party at our house with our next-door neighbors. It will be a buffet with daiquiri cocktails, jerk meatballs, noodle salad with veggies and peanut sauce, curried chicken salad with crostini, shrimp cocktail, crudites, and a brandy ALEXANDER pie for dessert.

It is hot enough to grill on a truck fender.

Pork chops off the grill. I may stuff those babies. Big garden salad with whatever is ripe by this evening. Garlic bread.

I made Alm's and (Oma's) hard-boiled eggs with parslied potatoes and angel hair coleslaw.

Unsweetened iced tea with lemon.

A bowl of sweet cherries for dessert.

MY actual Oma made something like this and served it with boiled potatoes too. This was such a good and nostalgic dinner. Sometimes my husbands cheat a bit. With food.

As long as it's once in a while, I think that's OK.

I can't stand really hot weather. We ate inside with the A/C on full blast.
