I think the left overs are finally about gone and I can get back to cooking the way we usually. Tonight is the first Thurs night happy hour of the decade. We will be out for a few hours so dinner will be frozen pizza, doctored up a bit, so it is 1/2 homemade.

Hope everyone is doing well this second day of the New Year; Happy birthday to Karen and well wishes to mainebrokerman.

We are joining a group of folks from church at a local restaurant tonight - The group goes out most Thursdays but each week it changes who all goes. Probably 10-12 tonight. We don't go every Thursday - but tonight we are.

Tonight is a lazy dinner. Chicken stuffed with apple and brie, from the frozen food section, and experimental frozen orzo with green beans. Oh, wouldn’t it be great if the starch and vegetable components of dinner were 4 minutes in the microwave? I’m trying it, but it just seems wrong.

1. New Year's Eve was Filet Mignon & Tristan Lobster Tail at Duke's in Kaanapali, Maui. Mai Tais too!
2. New Year's Day dinner was Caesar Salad with Mahi Mahi at Castaway Café, Kaanapali, Maui. More Mai Tais.
3. Tonight, back to "sensible" dining at home. (gruel and dirty water.) Okay, not THAT bad but I do need to lose some holiday pounds before they become permanent.

Friends and family went back to California today.

Beyond Meat Sausage & Peppers with onion, garlic, hot peppers & yukon potatoes!

Our first time trying the Beyond Meat Sausage, which is strictly plant based and they were good. We will be making this dish again.

I'm taking a break from holiday cooking for a bit.

Top Ramen; throw in some chopped leftover veggies, gently drop in an egg to poach (but keep the center gooey) - slurp and eat.
