Until last week I couldn’t eat hot sauce. Now I pour it on every thing. Can’t get enough. Strange.

That's interesting. It took me a while to develop a tolerance to hot or spicy foods.

That's exactly what I'd been considering! Well, homemade cheddar sticks of some sort. I already do a couple of different parm thingies, but I wanted to try like homemade cheddar puffs or sticks.

Years ago, my SO was trying Atkins, so I made some low-carb cheese sticks. They came out about as tasty as expected (in other words, not).
