I wanted to bake some holiday cookies to take over to my mom's, but people had already given her so much cake and candy, etc., that she wouldn't even want them. She keeps dumping them all off on me. lol

That's exactly what I'd been considering! Well, homemade cheddar sticks of some sort. I already do a couple of different parm thingies, but I wanted to try like homemade cheddar puffs or sticks.
Years ago, my SO was trying Atkins, so I made some low-carb cheese sticks. They came out about as tasty as expected (in other words, not).
I'll take your excess cookies. I've had no home baked cookies this holiday season.
