My thing is making big pots of soups in the cold weather. I LOVE a big pot of soup when it is so cold outside and I can eat it for days and never get tired of it.. My crews love them too, they never leave me any to eat for days .....

Now I LOVE baking too! Banana bread, punpkin bread... any kind that will drive you crazy with the smell... Pies, cakes cookies... Hummmmm! Shut up Laura, you are driving yourself crazy!

I'm just relieved that the corn tortillas were still good for today's tacos. The package did not have an expiration date, and I got it two and a half weeks ago.

Once in a very great while I actually have corn tortillas on hand for as long as a month...they are usually still good. I put the opened package in a zip-lock bag and make sure I get as much air out as possible. Of course, this only happens when I am working tons of overtime. Little overtime=eaten corn tortillas!

leftover/stale/harf corn tortillas are great for Migas(crumbs).

Tear tortillas in pieces and saute in oil, when they toast somewhat, add sliced onion, tomato, chili, and cinlantro

when all is combined and warmed...scramble in some eggs

make sure you toast the tortilla, that way is stays firm and crunchy when eggs mix in.

I make migas frequently...my problem is, I very seldom have tortillas long enough for them to get stale. We use them (corn and flour) frequently in place of bread and for snacks.
