Debey - We have always put up creamed corn since I was a child! I know about the whole scorching thing - BUT - we now use the microwave to blanch the corn we have cut off the cob, and we need not fear scorching it anymore. Have been blanching the corn in the Micro for years now. Is so much easier!

Ohh, I wish I had fresh corn to freeze for later. Guess I'll have to drive by a corn field some dark night!!.. lol......

How long do you blanch your corn in the microwave? And do you do it in a bowl/zip-lock bag? You cut the corn off the cob when it is still raw? I'd love to start blanching it in the microwave! I enjoy fresh corn that is frozen so much better then the canned or store bought frozen!!

I made strata yesterday. It's one of the few things DH hates, so I made it for myself. To me, its really good comfort food...sort of in the same way as mac and cheese.

Butter 4 pieces of good bread (I used some bakery italian). Place 2 in the bottom of a small casserole dish (the dish should just fit the bread). Layer on slices of flavorful good quality cheese, 2 more pieces of bread and another layer of cheese. Mix 2 eggs, a little dry mustard and 1 1/4 cup milk. Pour over the strata and let soak for a few hours or overnight.

Bake at 325 for 45 minutes. It puffs up and the cheese is all gooey. It was yummy.
You can add some tomato slices if you want.

Place the "cut-off" corn in a large 9 x 12 pyrex dish - fill to about 3/4 full. The best thing to know is that you want the corn to boil for a total of 1 minute. Microwave on high until it starts to boil, stir after 30 seconds, return to microwave and boil another 30 seconds. Stir. This normally takes a total of about 10 minutes from beginning to end. Place in bags and freeze.

We have been doing this for years, and boy it sure is nice not to have to worry about scorching!

It sure would be nice! Plus a lot less mess!! Honestly I'll bet the flavor stays in the corn better too doesn't it? I am definately going to give this a try! Thanks.

Tomato Soup with White Beans and Bacon Recipe. This recipe was just sent to me. It is to hot for soup here but I figured I would offer the reciepe for those with a bunch of ripe tomatoes. I am pretty sure you could freeze it for later

I have dicovered my Pampered Chef cheese cutter/knife gadget works better, to cut the kernels off the cob, than any other gadget I've ever owned. Along with an angel food cake pan, using the "tube" to hold the corn securely. I lost count, at 60 bags....3 cups per bag.
