I don't have very strong hands. I love chicken soup made from scratch and typically buy one or two organic chickens and cut them up in chunks after I remove the legs and most of breast meat (to be used for a different dish). Can anyone recommend an electrical knife that can be used to cut up a chicken, bones and all? I looked on Amazon and the carving knifes do not seem to be strong enough for this kind of task, but then what is left? Surely others cut up their meats, bone in? Thank you for any suggestion you may have.
I just buy chicken parts ( mostly thighs ) & use them for my chicken soup, once the meat is cooked, it is very easy to pull off the bone. Chopping up whole chickens, seems like extra work. But I hope someone has a better answer for you.
I just pull the meat off the bones and cut it up. No strong hands needed. Especially for something like soup, it doesn't need to be pretty.
ETA: I see now that OP is talking about cutting up the chicken *before* cooking it. Not putting cooked chicken in the soup. My bad. But like Hawk points out below, it doesn't take a lot of strength. I still don't think an electric knife is needed. Just a basic understanding of the anatomy of the joints and working at the weakest points.

Cutting the bones isn't really necessary. You need to use gravity, and a little pressure.
A really good sharp knife should slice through chicken without a problem, especially when you find the sweet spots at the joints. Electric knives are more for slicing cooked meat than raw.
