You want a war horse in the kitchen, something bomber than can handle many functions.

What would it be? A good food processor, a Kitchen Aid stand mixer, or a Vitamix/high end blender?

I realize these do different functions, but say you have great knife skills and want a mixer to do your bread kneading, you would probably go with the stand mixer.

Ok, so what’s your war horse in the kitchen?

Easy answer: Our Breville countertop oven. It's the size of a large toaster oven, and performs all the functions of a toaster oven - and more.

We have two built-in wall convection ovens in our kitchen. I use this thing more often. It takes WAY less time to pre-heat and uses WAY less energy. Virtually every night and some mornings, I use it to warm the plates. Almost anything that I would cook in the wall ovens that will fit in the Breville I cook in the Breville. The Breville has a convection button. When we entertain, I have three ovens (and yes, I have used all of them at the same time). It toasts bread, bakes potatoes, keeps food warm, etc etc etc.

The only think I don't like is the broiler on it. For that, it's back to the wall ovens.

I'm going to pick something random - mason jars. They are great for leftovers, storage, making salad dressing, canning (if you are that sort of person), and they are leak proof and fairly durable if you need to travel with some food stuffs - unlike most of the storage containers that are out there.

Big knife, paring knife, cutting board.

Iron skillet.

Timer.

Steamer.

Various pans.

Spatula.

I could and do go years without using much more than that. Oh yes, the nuker. For when you want to get something done NOW.

Going by the multi function aspect, I’d go with a Kitchen Aid stand mixer, mostly for the pasta and meat grinder attachments.

I’m starting a kitchen over again from scratch. A food processor is nice, but I have great knife skills. I want to bake more, bread, flatbread, pizza dough, so yeah, a stand mixer.

I'm a Luddite at heart.

My uncle's old deer skinning knife gets used almost every day and does it hold an edge!

Wire whisk.

Heat resistant spatula.

A heavy duty saucepan and a set of cast iron skillets.

Truth be, I use them, but even the sound of a machine doing something I can do by hand is jarring to me. I love to create with my hands

I love my dutch oven (enamelled cast iron). I can use it to cook pretty well anything. I use it for browning meat, making sauces, soups, stewing, deep frying, roasting meat in the oven and baking bread. It is on my stove all the time. If I could have only one pot, it would be my dutch oven.

Versatile? A nice sturdy fork. You can stir with it, whisk with it, flip things, hold things steady, fish things out of the bottom of the toaster or the stew pot, and when you're done cooking, eat with it.
