I think fennel is an under used vegetable. I really love it sliced and roasted. I'm planning on using some in a marinara sauce and see how it turns out. I've had it thinly sliced in a salad. Anyone like it as a pizza topping? I love using the seeds in my mild Italian sausage!

I don't cook a lot, but I use it when I make Ina Garten's roast chicken. Wonderful flavor.

It's ok fresh fennel to eat raw but I am forbidden to have in the house LOL. Husband cannot stand the smell. I am not a fan of fennel in sausage or other dishes either. I buy sausage without it or I buy cheese and parsley sausage. Fennel is my least favorite flavor.

I use fennel seeds when I bake my bread or I add it in chai or I boil it in water when I have an upset stomach.
I remember mother used to add fennel with wild game dishes in my childhood.
I like fennel (saunf)in Indian cuisine or salads like this one I make once in awhile with baked salmon.

fresh fennel
onion
rosemary
white wine vinegar
olive oil
salt/black pepper
black olives

My wife uses it in her Sicilian baked sardine pasta. Doesn't sound very good but most coastal Italians would disagree with that assumption. I love it.

Love the seeds or fronds in a lot of german influenced dishes like sauerkraut, hot potato salad, rye bread, salmon, etc. I've had it raw in an apple salad, don't think I've ever had it roasted but it sounds like something I'd like.

I sprinkle the seeds on top of my Italian Sausage pizza. Especially if I can't smell it in the sausage. I also like to add a small amount to my ham and peas fettuccini.

The vegetable is good sauteed.

Once I ate in a tandoori restaurant and they brought a small dish of candied fennel seeds with the bill.

It's funny to me that I don't care for black licorice but am fond of both fennel and basil which are reminiscent of the herb. There's just that subtle difference.

I'm a big fan of fresh fennel, but rarely buy it. DH isn't in love with it, and the price of it makes me cringe,

Fennel seeds - ugh. I dont find that they ra Dee te like fresh at all. Just strong and bitter taste. They are the only reason I dont buy everything bagels. And I'm the oddball getting pastrami on a roll.

I love fennel seeds, put them in pasta sauce to taste like Italian sausage.

I used to pick and chew on fennel fronds growing wild, but I don't think I've ever had the stems raw or cooked.
