I totally forgot "salt potatoes" - I learned about them while living in North Eastern PA. DELICIOUS!

Northern Plains Potato Growers Association

There's a million things you can do with them - scalloped, mashed, baked, twice baked, fries, chips, latkes, knishes, hash browns, tater tots, au gratin, potato salad pierogies. My favorite is the latke. Hard to get good latkes though. My favorite latke place closed last year. I probably eat more potatoes as chips.

Ridged potato chips are better. Humpty Dumpty All Dressed and Wise Dill Pickle are my favorites right now.

A Central NY clambake favorite! I need a double dose of blood pressure medicine when I eat them, but they’re worth it!

Salt potatoes are a regional dish of Syracuse, New York, typically served in the summer when the young potatoes are first harvested. They are a staple food at fairs and barbecues in the Central New York region, where they are most popular. Wikipedia
Never had those. It's something to look forward too.

Homegrown new potatoes parboiled, tossed in olive oil, and oven-roasted with rosemary and garlic. Could eat them every day.
