To those who like egg sandwiches, I've always liked them since I was a child & they were my favorite sandwich & still one of my faves now. I cooked a few eggs, omlette-style w/ just a little sprinkling of Lawry's Seasoned Salt on some (soft) wheat bread w/ mayo. That's it.
Now, I don't know what my grandmother did to hers when she made it. As far as I know, she used the same ingredients as I do above, but I remember liking hers THE BEST, even more than my Mom's when she'd make them for me when I'd visit her as a child here & there. Perhaps it's just the different ways the same ingredients used to taste decades ago.
I have been making meatloaf alot, with ground turkey....and now ground beef. The beef, has been on sale, for a reasonable price.
My meatloafs, are never the same twice. I tend to throw in things, like roasted red peppers, olives, or other things I find in the fridge.
Tonight, meatloaf sandwiches.
