The price doesn’t matter to me because I like it. It’s just the quantity change, and having to use 2 boxes to fill the 8 x 8 pan. Just wish they would be honest on their directions. I remember it baking up to fill the depth of the pan. Now they say it’s one inch baked! Like a previous poster said, that’s a corn pancake!

Been using Jiffy products for years and have their free cookbook too.

I'm a two box user and have learned to buy it fresh and not keep it on the shelf too long. If I have it more than a couple weeks I'll add a bit of baking powder when I make it.

The way I make it:

2 boxes Jiffy Cornmeal Muffin Mix

2 large eggs room temp

1 cup of Butter Milk

Placed in mixing bowl and mixed well but not over stirred.

I heat a 10 inch cast iron skillet in the oven 350 degrees
and bring it out to sit on a trivet. Put a half stick of margarine
in to melt completely and then pour batter into the hot skillet.
This gives a nice brown crunchy crust on the bottom.

The baking time is the same on the box but I watch for small
brown patches to form on the top before removing from the oven
to sit on the trivet and cool with folded dish towels over top.

I use this recipe to mix my own Jiffy if I don't have any. Makes one 8 oz box, but I suggest doubling it

2/3 C all purpose flour

1/2 C yellow corn meal

3 TB sugar (less if you like)

1 TB baking powder

1/4 tsp salt

Sift well together and store in airtight plastic seal tight container.

I don't think that they do as the boxes that I've bought at the local supermarket up the street contain the same amount per weight as the ones from Aldi. (Just went and checked in my pantry just to be certain as I have a box from each store living in there right now.)

For me, one box makes four to six old-school sized muffins (newer pans are a bit larger; mine is vintage), one pan of corn sticks. or enough pancakes or waffles to feed two to three people, depending upon just how hungry people are and if I'm serving other things to go with that meal. I've never made Jiffy cornbread in an eight by eight pan, but I use two boxes if I'm going to make a heftier batch in the cast iron skillet.

I'm impressed by the response that you received from Jiffy. Gotta love a family business that's been around since forever!

This deflation of product size has been going on a long time. When I was about 8 years old, all candy bars suddenly cost twice as much and were only 3/4 the size. That was quite a culture-shock. Little did I know was was yet to come, over the years.

This has happened with all kinds of food. The size goes down while the price goes up or stays the same. Ice cream is another good example where the normal size was 1/2 gallon. Don't even get me started as to what a large pizza used to look like.

Love me some Jiffy Corn Bread, hell I'm about to go buy a box after work Today. My mom would make the best tasting stuffing out of Jiffy corn bread
