Baby Backs, Corn on the Cob, Coleslaw, Mashed Potatoes. I think a nice tall G&T will be drink of choice with that.

For dessert, fresh figs are on special. Some a bit on the ripe side, so I'm making Fig Clafouti. An easy to make custard type cake with the figs in them.

Last night's dinner was a bowl of minestrone and bread. Simple but satisfying.

It's is a crappy rainy day here. I figured it was a good day to simmer a big batch of red sauce on the back of the stove. My husband made a big batch of meatballs to serve with it. We will freeze leftovers into meal size batches.

I stopped by the bakery this morning and picked a day old loaf of ciabetta and am turning that into garlic bread. I will cook up some fusilli col buco pasta I picked up on a trip to the Italian grocer last week. That will round out our meal!

It was the first time I made it in my life. I had it once eons ago, at a restaurant, and I remember it being so oily and heavy. It made me feel a touch ill as most heavy foods do, so it turned me off of ever trying it again. Hubby loves it so I decided to give it a try making it. Turned out really nice. Not oily or heavy at all. Maybe because I took care to soak up the eggplant slices in wads of paper towel after frying them? I also didn't use much mozza which I believe might have helped. So, I'm now an Eggplant Parmesan convert! :-)
You can also oven-fry your eggplant, quite a bit less greasy that way. Love me some good eggplant parm! It’s a but labor intensive, but well worth it.
I think I know what we’ll be cooking next weekend!

Well due to a planning snag on my part, we are having chili dogs and a sweet heat chopped salad kit.
