Early dinner for me and it was scrumptious! I had sweet chili chicken based on this recipe -- https://rasamalaysia.com/thai-sweet-chili-chicken/ -- but with one modification, I added onions & broccoli to it to make it slightly more healthful, and had it over half rice, half riced cauliflower -- that combo works great with saucy dishes! (Next time I will try other veggies.)

I haven't had fried food in 7-8 months so this was a lovely treat and gave me a chance to try out my new $20 () electric skillet (it worked great!). I have a lot left that I will freeze -- not sure how it will turn out but I've been able to crisp foods up again by re-heating them in the air fryer, so hopefully that will work for this too.

Our home fajitas. Sautéed onions & peppers in olive oil. Other pan for the steak and chicken strips with olive oil and lime mango seasoning. I had two. Mt Dew.

Trader Joe's Vegan Tikka Masala with Cumin Rice (Indian), and I added in a pile of sweet peas sauteed with olive oil, garlic, salt and pepper... washed it down with some chilled Trader Joe's ginger/lemon seltzer. The dish would normally be made with chicken, but this was made with soy "meat" - wasn't bad, all things considered, but I still prefer the taste of chicken. Trying to lower my meat consumption though, and also just to keep trying new things. The cumin rice and the sauce for the dish were great - as with most of TJ's ethnic foods - seldom a miss.
