Some concoction of spicy plant based chicken nuggets in a high fiber flour tortilla, avocado, lettuce, tomatoes and a sauce. Air fried french fries that I didn't make the other night.

Took a box of Mexican rice ( like rice a roni ) & I will mix in some leftover Costco chicken that I had in the freezer. Will have it with a tomato & red onion salad, maybe some shredded cheese too. It's a look in the pantry kinda day, as I don't want to go out to the store to buy anything else.

I made a big batch of stuffed shells today. We'll have some of those along with some sautéed zucchini and garlic bread tonight.
