Unfortunately, I was sick for most of Mother's Day so we are having a special dinner tonight: we are having grilled garlic lamb chops with polenta and scallion sauce; sugar snap peas and glazed carrots; garlic knots; and cherry and chocolate trifle for dessert.

Steak, lemon drizzled broccoli rabe and snow peas.

Fried rice topped with an egg.

.........the top of the refrigerator is once again stuffed to be brink with meat. Brisket, hamburger, chicken, fish, and pork. Nothing in any particular order or arrangement, just where ever the baggied meat could fit, be crammed in.

So the way I see it that on those evenings when I want a "meat", I will reach in there, pull out something, and then decide what to make with it. Since I am now a Type II, meats for dinner generally work well for me, more or less, less is better, not too complicated, like that.
