Tossed a hunk of frozen beef into the Instant Pot with an onion, cuz it's the only veggie I have & I'm too tired today to do much else. Would have been nice with a handful of rice/barley, but lately, I can't find either in the stores... don't know why... the shelves seem bare at local stores. Maybe since hurricane season just began, people are preparing? I'd better follow suit & remember to keep my gas tank full.

I'll have roast beef later with a lettuce-tomato salad & Meyer lemon-oil dressing, tossed with a bunch of nutritional yeast.

I'm not really hungry today, since I had 2 dinners yesterday... 7-egg scrambled eggs, 4 sausage patties & 2 large pieces of focaccia. I rarely eat that much, but it was an I'm-hungry-all-day kind of day.

I smoked a chicken and some sausage and DH made a Mexican corn esquites dish and I’m going to make some zucchini fritters. It’s kind of a Texas, Mexican, Italian fusion.

Was going to make corn tortillas, but I decided to skip that so used some ready made flour ones we had. Tacos al Pastor with pineapple, red bell, red onion, jalapeno salsa.

That was good for a laugh out loud. Thanks. We do it all the time around here.

Chef Daughter is switching over to her summertime schedule road side stand so we've been missing the Friday deliveries of her food orders.

Today she and her friend dropped off all manner of baked goodies: rhubarb blueberry cake topped with streusel, rhubarb custard cake, glazed lemon/orange bread and four cheese chive sourdough bread. I feel like a queen with such bounty.

But the best thing she brought (in one of her commercial soup containers!) was a very lively passel of tadpoles. Part of my Mother's Day present.

It's been years since the racoon massacre that we've been without frogs in our pond. Can't wait to start hearing them croaking outside our window at night again.

And no, frog legs will not be on our menu this summer.
