One dish I enjoy making and eating is a combination of tomatoes, okra, corn, and smoked sausage. The juices from the cans of tomatoes & okra, and corn are heated to a boil with a table spoon of dried onions. Heat is reduced with a little butter and a small spoon of "better than bouillon" beef base, and simmered to reduce. (just under a boil) Black pepper & garlic salt are dashed in and the vegetables & sausage are then added to cook for a few minutes until hot.
In another saucepan white rice is cooked. This will be plated as a bed for the hot veggies & sausage topping.
In the meanwhile cornbread is baking in the oven.
Once the veggies are on the rice, pour a bit of stock over it. I dust the dish with Parmesan cheese and a slash of hot sauce.
The sausage, butter, beef flavoring & cheese can be omitted to make this a vegetarian dish with other veggie flavoring agents added to your taste.
Greek salad with lots of veggies and lamb gyro meat. Maybe some of TJs quinoa dolmas on the side

I need to use up half a pound of ground beef so I think I will make taco meat, but I can't have tacos as I have no lettuce in the house. So my taco meat may turn into enchilada meat (but I'm not sure I have corn tortillas and enchiladas with flour tortillas are yucky), or I may just cook the ground beef today and have tacos tomorrow after I make a Hannaford run.
So that means I have to figure out something for tonight ...
