Today I cook!! I smoked some short ribs for about an hour with cherry wood. I then charred them on the grill side of my smoker. I now have them braising in Guinness. To go with I will make a beefy onion rice and carrots and apples cooked in a brown sugar ginger mix.

Mrs Driver is making MEATLOAF tonight! I love the meatloaf she makes, 1/2 beef, 1/2 lamb topped with Sweet Baby Ray's BBQ sauce. A side of sauteed portabello mushrooms and I'll be in gustatorial heaven !

I’m going to attempt to make some beer battered cod. Our Costco doesn’t carry it so I bought some cod portions the other day at Sprouts and will try my hand at making them. A broccoli mushroom rice casserole on the side and maybe some yellow squash.

Tonight, it's ribeye only, pan fried with fresh thyme & olive oil... burnt on the outside, rare on the inside. Maybe a lettuce-tomato salad later with Meyer lemon-olive oil dressing later, if still hungry. To drink, a couple of IPAs & water.

We had a heavy lunch so fixing a buddha bowl with roasted sweet potato chunks, roasted bell peppers, black beans, blackened corn, spinach, pickled onions, and cucumbers. Haven't figured out the sauce/dressing yet.
