Winter still lingers in Northern OH...

So, I saw a recipe for easy vegetarian Swedish Meatballs with bow tie noodles. They cook in the same sauce pan. Which is fun. The creamy sauce is made with full fat coconut milk. It was missing cardamom, so I added some. Serving with beet and cabbage salad with a citrus dressing.

Vanilla yogurt with lemon curd individual pies, with a ginger snap crust.

I'm wondering if it's your indoor lighting?

I'd like having one, but as clumsy as I am... I'm on my 3rd phone in 2-yrs... it irked me to pay $150 for the current phone, which is only months old & already sporting a cracked case & scratched screen. And... I have some kind of protective film over the glass AND have a protective case on top of the phone. I'm very hard on electronics.


For me, a small bowl of homemade tomato sauce packed with beef/pork. It tastes great... not at a point in my elimination diet where I can eat any carbs, so just alone... I'm imagining I'm eating pasta & bread with it. Nothing else... I'm not hungry today.

I made Barefoot Contessa's baked shrimp scampi, but I used half the amount of butter she uses and it was still good. Heated up the rest of the broccoli rice casserole and steamed some carrots in the instant Pot. I'm stuffed!

Dinner this evening was Orecchiette Ai Broccoletti, except we had no broccoli rabe so we subbed broccoli. This dish is wonderful yet oh so simple! It is orecchiette pasta of course, broccoli, evoo, garlic, chili pepper, and usually a couple 2-3 anchovy filets, but to keep this vegan we used some capers and a bit of dulse seaweed flakes. Topped with a vegan hemp seed parmesan, and served with a salad with lemon vinaigrette dressing, fresh baked wholegrain Italian bread and pinot noir to drink. Multo buona!

Mexican/Tex-Mex dishes. Chorizo pick-ups, chorizo cooked, drained, then Munster cheese placed over and broiled. Picked up with tortillas or tortilla chips. Guacamole. Taquitos or flautas using flour tortillas and seasoned ground beef mix. I can never remember which is which, I.e. corn versus flour tortillas. Craig made a cooked green salsa with tomatillos, poblano pepper, onion, garlic, etc.,

Pork loin, protein veggie side dish, and apple sauce, & might as well say water.


Dessert: Snickers cone. I worked hard this afternoon for that - mowing the lawn in the back yard and preventing the blades from getting too close to the darn tree roots. Wooded area out back.
