I roasted a whole chicken and made cornbread stuffing and a big green salad with avocado. I had a pckage of The Pioneer Woman chicken gravy and mixed it with the drippings and it was a passable gravy. Homemade oatmeal cookies for dessert, with herbal tea. Of course I have a ton of leftovers.

Coming up tonight; Rotisserie chicken from the grocery store with a tray of their in-house fresh cornbread.
Cheap. Quick. Good.
