I’m about to be in your boat when my various tomato varieties ripen all at once. I usually do fresh mozzarella and no hot pepper in my raw tomato pasta sauce, but maybe I’ll try it your way this year. We’ve had a very rainy may, so it’s looking like I will have more tomatoes than I’ve ever had, if I can save them from squirrels and the rowdy toddler. I’m really looking forward to my first fresh tomato and pasta dinner!

Simple dinner tonight - Kraft Mac and cheese made extra creamy and with a few chopped fresh green beans cooked with the noodles.

9pm... organic pistachios & Lay's Wavy lightly salted potato chips with Fancy Linen IPA, or 3. I'll eat produce tomorrow. Too tired to think of menu planning today...

Another hot and humid day.The Victoria long weekend was wonderful. We managed to do early morning cycling each day and spend a lot of time in our garden. We are still under lockdown until first week of June but a few loosened outdoor restrictions did happen over the long weekend.

Tonight channa masala/chickpea dish served with leftover Pulao and cucumber/green chili raita. To drink lemon water. For dessert strawberries.

Store-made fried chicken (tossed the coating/skin) & cherries. Those cherries better be good... they're the 1st of the season & I didn't realize 'til I got home that that little bag cost $14, ouch!

A few nights ago, I sautéed two sockeye salmon fillets. That same night, I ate one of them with some oven-roasted asparagus.

Tonight, I am making a big salad of spring greens, cucumber, roasted peppers, cherry tomatoes, and Vidalia onions tossed with my homemade honey-mustard dressing. I will top that salad with the remaining (cold) salmon fillet, and I am really looking forward to it.
