Quesadilla with tomato, spinach, avocado and salsa, side of street corn (costco).

Honestly, it's too hot for me to care about food, today will be 97, but it's a dry heat. Next week should be back down to a temperature that is fit for humanity.

That looks amazing, T. What are the white, doughy looking things on the bottom right of the pic, near the pink flower?
They are steamed buns. You place some of the duck inside and add some spring onions and sweet bean sauce. The eat it like a mini-sandwich.

Brilliant. I have all the ingredients for this, so that will be tomorrow night's dinner, with a side of snow peas.

A big salad for us tonight. Both of us ate a late lunch so we are in the mood for something light.

It's my 1st day out of bed & out of the house in a week, so just going to the market tuckered me out. I'm supposed to be bed bound for another week or 2, just to rest & sleep, so meals will be simple.

Had only store bought fried chicken... tossed the coating & skin... & water. That's all for today. But, I did eat the whole bleedin' box. I need produce, but there wasn't much to choose from (I went to the wrong Publix), so I'll have to shop again on Fri.

Bought 20-lbs of varying kinds of potatoes, so I can make homemade perogies tomorrow, with my own dough. It will take days to do a batch at a time. Since I can't eat cheese, I think I'll substitute crunchy bacon in it's place, just for extra flavor.

Enjoy the rest of the week, All. Happy June! I love the summer months!
