What’s for Dinner

Lemon flavored speedy chicken and finished off our leftovers of macaroni & potato salad. Lemonade.

Costco pork tenderloin, take it out an hour or so before cooking, dry thoroughly with paper towels, rub with spice then grain mustard, process some almonds (and cashews or whatever you have) with spices and herbs and rub/pat that over the mustard smeared pork to create a crust. Roast or convection bake at 400° for 12 minutes or so, turn down to 350° for another 12 minutes take out and let rest - should be rare to medium rare. Heat up a Sauté pan to medium high and finish it off for a couple of minutes a side in olive oil to brown the crust perfectly. Slice in 1/2 inch slices over starch or vegetables. We had an iceberg lettuce wedge salad with turkey bacon bits and blue cheese dressing. Yum!

I’m supposed to be hosting bunco tonight but we’re down to half of the roster so it will be a small gathering instead. I bought enough food for 12 but had to scale back to half the amount - except the Tres Leches cake! The menu is chips, salsa & queso, jícama with Tanjin seasoning, guacamole, chicken and beef fajitas (with flour and corn tortillas), Mexican rice, charro beans and of course the cake.

I am making a pork meatloaf with oatmeal, yellow peppers, onions & tomatoes. Sauce will be a bottled sauce of korean taco mix lol SIdes of coleslaw & some mixed veg.
