Taco salad made from my leftover meat, warmed up.

Iceberg/romaine, red cabbage, radish, tomato, tortilla chips, grated cheddar, and thin sliced lime pickled onion, with a dressing of Greek yogurt and hot sauce thinned with a little water.

Oven baked ribs and scalloped potatoes, fresh broccoli.
2 cocktails. This isn’t normally a cocktail night, but I’m in need of calming down after watching the news today.

Pulled pork/sourdough barbeque sandwiches, mango curry coleslaw, sweet potato fries and peach pie with cinnamon ice cream.

A chopt salad that probably should have been eaten at least 2-3 days ago. The crispy 3 tri colored tortilla strips helped as did a few sliced chicken strips. Small glass of moscato.

Dessert: couple scoops of choc and peanut butter ice cream.

Pork cutlets tonight - I’m making DH’s the traditional way with breadcrumbs and I’m going to attempt to make mine using pork rind panko. I’m also making yellow squash and he’s getting a sweet potato- (I might have a few bites).

Haha right? Pork on pork! Actually I bought the pork panko, but it would have been a lot cheaper to grind up some pork rinds in the food processor. It was tasty enough - gave it some crunch but didn’t quite keep it moist like breadcrumbs do.
