Ground beef with potatoes?

How about sauteing some onions, peppers(if you don't have peppers, that is ok), maybe some tomatoes as well.
A bit of garlic towards the end. Do not let the garlic over cook or burn. And then toss in some diced
potatoes (that you boiled a bit prior to mixing it all, to speed things up.). Then throw in the ground beef & mix together. You can even add some cheese on top & toss into the oven for a bit until the cheese melts. If you do all of this in a lodge pan, you can use the same pan to go from the stove top to the oven.
Potatoes & ground beef go very well together.  They like each other

Countrylv22, your ground beef & potatoes sounded great -- but alas, I saw your post too late.
Magic, my birthday is New Year's Day and I turned 62    yesterday. No biggie -- really! And I LOVED your dinner photos, as always! Do those doughboys taste like donuts? That was my first thought (well, OK, my SECOND thought, after "I want some of those!"    ).
Oh, and for dinner tonight I decided to go with something even simpler than tacos (since I had no lettuce) and enchiladas (since I wasn't sure I had corn tortillas -- as it turned out, I did, but I was too lazy to make enchiladas after all): nachos.
It was very simple -- I just cooked the ground beef as if I were making tacos, then also heated up some refried beans, and I had those with tortilla chips. I added fresh diced tomato and cheese, then added sour cream, guacamole, and salsa (Newman's Own black bean & corn, my favorite store-bought salsa) at the table.
It was good and quite filling.
I basically took yesterday and today OFF but will likely do some work (for our spring semester) tomorrow. We are going back 3 weeks later than anticipated (actually, 3 weeks and 6 days later than we were ORIGINALLY going to), which means mid-February so I have a LOT of time, but I don't want to procrastinate. I usually like doing course prep (including developing new courses or coming up with new articles, videos, etc. to get my students engaged!), but sometimes when the deadline seems far away -- as it does now -- I tend to procrastinate.  So I'm trying not to do that!
HAPPY 2021, EVERYONE! I am very happy that 2020 is GONE, but I also just saw Nita's name with "Eternal Member" under it and that was a sad moment.    She was such a sweetheart and I miss her posts (and her very kind rep comments).

Dessert: finished off our Panettone.

pan fried noodles, with Thai tofu satay in peanut sauce with mint, homemade banana nut muffins, sweet potatoes with brown sugar and vanilla, and sweet iced tea. all kosher.
