Salmon burgers with cheese on toasted Brioche bun - added slice of red onion and tomato, crushed peppercorn pepper, avo mayo, and a couple bread & butter pickles. Side of air fried zucchini fries. Drink: lemon iced tea.


Hubby makes a decent burger on the Optigrill

DH made gumbo for our first cold weather day. Well, it's cold for us anyway! I'll make the rice and we're going to have another salad because I bought this huge container of spring mix that was on sale for $3.49 and it's still good and only about 1/2 empty.

Leftover Spicy Pork stew with root vegetables and added Italian homemade meatballs and Fresh Chanterelle mushrooms sautéed in butter with garlic & ground pepper❗️

Lots of lovely dinners! I was lazy tonight ... just "cooked" some instant rice in my microwave (that counts as cooking, right?! ) and heated up some leftover Chinese food from one of my favorite local restaurants (as in, left over from a couple of months ago -- I bought WAY too much so froze the leftovers -- I nuked them for a minute, then stuck them in my air fryer for 4-5 minutes and they turned out great).

I do have some chicken thighs that I need to either cook or put in the freezer by tomorrow, so if anyone has a great recipe, I'd love to try something new with them! They are bone-in, skin-on, but of course I can tear off the skin and de-bone them if needed.

We weren't that hungry so we had home made potato pancakes with home made apple sauce and a dollop of sour cream. Apple, pear, grape, cheddar, walnut and chopped Boston lettuce with ginger apple dressing.
