LOVE enchiladas (and yours sound wonderful!) ... but I have a hard time just eating a couple!

Tonight I will have leftover Moroccan chicken ...

It turned out so well last week that I tried it again last night, with a few modifications (like adding spinach, which I liked in it a lot). It's quite easy to make on the stovetop, and it looks and smells great while it's cooking. Tastes great too!

Going out, ( meeting) I haven't enjoyed any of the meals I have had there, so tonight I will try the wood grilled chicken & hope it will be better. I am also going to ask to change the meetings location.

I'm burnt out on cooking. Tired of doing big shopping 'cause the stores are far, rushing to cook/eat the produce, freezing it (then defrosting and finding out it tastes "yuck"). So I signed up for hello fresh for 3 nights a week. I've had them at my sis's and they are good.

It will probably pass.

Tonight is black bean quesadillas, with onions, avocado, tomato, green onions, sour cream and arugula, with scrambled eggs. I have some homemade hot sauces which we'll use.

We liked it very much. The quality is good, and the best part is not having to think up something for dinner. I gave it up eventually, because it involves more slicing and dicing and preparation than I usually do.

I will go back for awhile eventually.
