I found a pork loin roast on sale and slow cooked it on the smoker. I brined it for 24 hours and then cooked it to 140 degrees and it was still tough. I don’t understand what they’ve done to pork to make it so dry and tasteless. I made mashed potatoes because that makes everything better and some steamed broccoli.

Dinner was our homemade-homegrown pesto sauce from the freezer with fettuccine, garlic bread and a mixed salad. Glass of pinot grigio to drink.

From a local place earlier this week: Meatloaf, mashed potatoes, and a dinner roll. Having the last of the leftovers tonight. Really good!

pork loin roast is inherently dry -- it's just not a fat-marbled cut, more akin to turkey breast than brisket for cooking styles. That cut is better off with a dry brine and a quick roast.

Tonight is refrigerator roulette with turkey featured prominently
