I had a hodge-podge dinner tonight, basically cleaning out the refrigerator ... 2 small leftover enchiladas*, then about 1/2 a cut-up chicken thigh over a tiny bit of leftover rice with Thai sweet chili sauce and 2 small shrimp spring rolls (I just discovered Seapak at my local Hannaford!). They were good, just kind of odd as a dinner!

* There would have been more enchiladas, but I LEFT THE PAN OF LEFTOVER MEAT AND SAUCE on the cooktop overnight!! I have literally NEVER done that before and was very grumpy when I realized I had (I'd been planning to cook more enchiladas and was wondering why I couldn't find the meat I'd cooked in the refrigerator! ). I hope this is not a sign of impending senility ...
Smelling all the Christmas baking I am craving for homemade vegetarian pizza tonight and one of my Advent beers I received for my birthday.
Ingredients for my vegetarian pizza are Durum flour with thyme in the dough,homemade tomato sauce,ginger,garlic,onions,green olives,mushrooms,green Bell pepper and Canadian marble cheddar cheese.Later while playing board games more Christmas cookie sampling with a glass of Glühwein/mulled red wine.
Last night we played Trivia at Modern Methods Brewing Company and had a Pizza with pineapple and banana peppers. It was good, Not sure about tonight yet. Something healthier than beer and pizza, that's for sure, but playing Triva was fun.
Sometimes you need to carouse and gallivant. Well I do, anyway. Too much baking and shopping. Needed a break.
