I made another marinated vegetable salad - this time broccoli, cauliflower, mushrooms, a few finely chopped Brussels sprouts, carrots, celery, red cabbage, and a couple of big chopped radishes. Dressing is olive oil and fresh lemon w/ zest, 1 clove garlic, balsamic, a slug of mustard, salt, pepper, red pepper flakes, and a pinch of sugar. I didn’t have chives, but I did sprinkle roasted pepitas over all.
Let it sit for two hours or more before eating. You can do this with whatever vegetables you have, but need to include some color such as red cabbage or halved cherry tomatoes. Next time I want to try and include snow peas.
We also have hot rolls and butter and Costco chicken salad cups if desired.
Do blanch any or is it all raw? I've never had, and MUST make this.

Friend came to pick up her gift yesterday. I looked high and low for the rest of it. Norwegian cookies I'd warned DH about saving and then hidden in the depths of the refrigerator . Turns out he found them and ate them for breakfast!

Going out tonight for a girls happy hour and dinner at a Mexican restaurant. I kinda feel bad leaving DH without a meal, but he's very capable and I'm sure he'll figure it out.
Today baked broccoli,oats,herbs of your choice Gouda patties served with cucumber or roasted cumin/chili raita,sliced hard boiled eggs and a tomato/green onion salad.For dessert clementines.
